The pop dispensers, nozzles and storage cups at both wells were extremely soiled with large amounts of biofilm buildup.

The APW Wyott roller cooker was very soiled.

There was no paper toweling in a dispenser at the hand washing sink behind the bar.

All food and beverage handling employees are mandated to obtain a valid and current Food Handler Cars from Douglas County.

Storage shelving are very rusty with clean utensils, dishwasher and equipment stored on them.

No sanitizer test strips were available to check sanitizer solutions at the dishwasher or in the wipe cloth storage sanitizer buckets. Employees require training with sanitizer and how to monitor to strength of the solutions.

Only one sanitizer bucket was set up for storage of wiping cloths, but no wiping cloths were stored; most wiping cloths were throughout the kitchen area or under equipment to prevent slippage. Provide multiple storage buckets with clean sanitizer solution and store cloths for use in them.

The inside of the microwave oven in the service area was very soiled. The vent (no filter screen) over the mechanical dishwasher and the ceiling service around it were extremely soiled with a significant amount of dirt, dust and grease. The fire suppressor piping and tubes for electrical under the grill hood were extremely soiled with rust and dripping grease. This is a potential fire hazard; clean immediately and keep clean.

Dry rot was observed in the service area under the ice bin on the floor.

Provide screen for ceiling in the service area under the ice bin on the floor.

Provide screen for the ceiling hole over the mop closet.

Significant amounts of dust were observed on the ceiling of the kitchen area and the food preparation area.
