Beef Cookoff winner makes stir fry-pasta dish
Marilyn VanAntwerp of Reno was deemed the winner of the Nevada State Beef Cookoff held at Douglas High School over the weekend.
Her “Beef Mediterranean” recipe featured stir fry beef and prepared vegetable spaghetti sauce plus pasta and frozen Italian-style vegetables for an easy and healthful dinner. Her recipe was one of five entered into the contest.
She will now compete in Orlando, Fla. She won $750 for first place on Saturday.
Second place went to Jennifer Waite of Carson City with “Bistro Peppered Steak.” She won $500. Third place went to Ruth Ballentine of Las Vegas with Mostaccioli Delight. She was awarded $250.
Judges were Virginia Nenzel of the Nenzel Mansion Bed and Breakfast, Herb Witt of the Beef Council and Joyce Hollister of The Record-Courier.
Her recipe is:
1 pound stir fry beef
2 tablespoons olive oil
2 cups prepared vegetable spaghetti sauce
3 cups (8 ounces) uncooked fusilli (spiral) pasta
1 16-ounce package Italian blend frozen vegetables
1/2 cup freshly grated parmesan cheese
Fresh basil for garnish
Sprinkle seasoning on meat and rub in. In non-stick skillet, heat 2 tablespoons of olive oil. Stir fry beef 1 to 2 minutes or until outside is no longer pink.
Add spaghetti sauce. Keep warm on low heat.
To boiling water, add pasta and cook according to directions on package.
Add vegetables for the last 6 minutes. Drain and place on platter. To serve, spoon beef mixture over pasta. Sprinkle with parmesan and garnish with basil. Serves four people.
Her recipe will be judged by the National Beef Council, and could be selected as one of 15 to be cooked and judged at the national Beef Cookoff in Florida in September.
