The mop room floor and floor sink are dirty. The walls and equipment in the dishwashing room are coated with old food debris. The kitchen ceiling light fixtures and pipes and hood are coated with grease and dust. Some dust strands are more than four inches long. The walk-in door is not clean. Discussed the proper cleaning of the meat/vegetable slicer. The shelving in the dry food storage area is in need of cleaning and repainting to provide a waterproof, cleanable surface. At least one employee of this establishment must be a certified food handler during all hours of operation.
